Cavolfiore a Tutto Dentro - “Everything” Cauliflower (6 Servings)
- 4 medium size shallots.
- 2 lb. Cauliflower.
- 0.15lb. Kalamata olives
- ¼ cup red wine vinegar
- Extra virgin Olive Oil
- (optional) Shaved Pecorino 9mos.
Clean and cut the cauliflower tips
Drop the cauliflower in a large pot with the pitted olives, salt, pepper and splash with oil and vinegar.
Bring the mix to boil and turn the flame to low. Make sure there is always some simmering liquid, otherwise just add a little hot water. Cover with lid till the cauliflower is starting to get soft.
Dry excess liquid out by removing the lid for a couple minutes. Then serve in a large bowl.
Add shaved pecorino on top (optional)
